Tuna Casserole for $1.16 per person (Inexpensive and Quick aka IQ)

This was always a cheap way to feed our huge family growing up.  I continued to make it after I had kids because we had a very limited income.  I haven't made it in a while, not because I feel I'm above it, I just try not to cook a lot of carbohydrates for dinner.  Actually, dinner should just be meat and veggies, or just veggies.  The majority of our carb intake should be at breakfast and moderate at lunch.

However, it can't always work this way when we have big families.  Serving meat a la carte at dinner can be quite hefty on the grocery budget.  If you all like tuna, this recipe is a big hit and will all be eaten.  It's also very easy to substitute ingredients based on what is in your cabinet.  Read the tips at the end.


Serves 4-6

TUNA CASSEROLE

INGREDIENTS
1 LB cooked noodles
2 Cans tuna in water, drained
1 Can cream of chicken or cream of celery
2 Cups green vegetables
1/2 Cup milk
1 Cup shredded cheddar cheese (optional)

DIRECTIONS
After you've cooked and drained the noodles, dump in all the rest of the ingredients in the same pot as the noodles.  Mix it all up.  If you want it to be a little more saucy, add more milk a little at a time. As long as your noodles are hot, you don't have to cook it any longer.  Add salt and pepper to taste. Serve!

TIPS:

  • Use whatever noodles you have on hand.  I prefer egg noodles in this recipe, but any kind is acceptable.
  • Give the tuna juice to your cat or dog, they love it!
  • You can almost use any creamed soup you have in your cabinet.  They are all good, except for like clam chowder, but that might be good too, idk.
  • We usually used green peas, but any green vegetable will suffice, unless it's lettuce, lol.
  • The cheese can be served on top of the casserole or mixed up in it.  If you want to be fancy with it, do both and bake the casserole to melt the cheese on top.  :)
  • You may also substitute a can of chicken instead of 2 cans of tuna.
This recipe costs approximately $7.00 or $1.16 per person as long as you buy store brand.  It could be cheaper than that depending on where you live and shop.
