Tater Tot Breakfast Casserole



We had a fabulous potluck breakfast at work a few weeks ago.  One of my co-workers brought the best breakfast casserole I had ever eaten!  I begged for the recipe and he gave me permission to share. We have another potluck breakfast coming up and I keep asking him if he's going to bring this casserole again.  You must try it!!  You will be hooked along with the rest of your breakfast companions.


INGREDIENTS
16 oz bacon, ham, and/or breakfast sausage
10 eggs
2 ½ cups milk
2 tsp dry mustard
1 large loaf crusty French Bread, cut into cubes
16 oz sharp cheddar cheese, grated
16 oz Monterrey jack cheese, grated (or use more cheddar, if you prefer)
32 oz bag frozen tater tots
1 medium onion, chopped (other veggies optional)
Salt
Black pepper

DIRECTIONS 
1. Cook your breakfast meat.

2. Bake tater tots per bag directions, but only for half of the time indicated.

3. Sautee onions (and other veggies; I used a red bell pepper, but pretty much anything works). Let cool.

4. Beat eggs with milk. Add in dry mustard and 1 teaspoon salt and mix thoroughly.

5.  Coat casserole dish with non-stick spray.  Layer of half of your bread cubes, half your cheese, and half your onions. Season with black pepper. Repeat with the other half of your bread/cheese/onions.

6. Pour in egg mixture. Season top with more black pepper.

7. Lay tater tots in rows on top of casserole. Partially baking them ahead of time will help keep them firm if you are prepping this and setting in the ‘fridge overnight.

8. Bake for 1 hour in pre-heated 325 degree oven. Season tots with salt. If you have any cheese left over, put it over the top and bake for another 10 minutes.

Tips  
*Top with sour cream, chives, green onion, or hot sauce.  
*Leftover biscuits may be an option in place of bread cubes
