Cajun Stir-Fry (IQ)

Another one of those yummy and healthy recipes I make that everyone loves.  This recipe is great with rice or noodles and perfect with a good buttered biscuit and/or garden salad on the side.

This dish is SPICY.

Makes 6 servings.







INGREDIENTS


1 lb chicken breast, cut up into bite size pieces
1 medium bell pepper, cut up into chunky pieces
1 small onion, cut up into chunky pieces
1 can diced or stewed tomatoes
1 pkg of turkey smoked sausage, cut up into 1/2 inch thick discs
2 tablespoons butter or margarine
1 teaspoon of minced garlic
1 teaspoon of Tony Chachere's creole seasoning
1 tablespoon corn starch
1/2 cup of cold water

DIRECTIONS

  1. Place butter, garlic and chicken (in this order) in hot, large pan on medium-high heat, sprinkle with the creole seasoning.  Cover and cook, stirring occasionally, for about 5 minutes.
  2. Add all of the vegetables-bell pepper, onion and tomatoes.  Cover and cook, stirring occasionally, until chicken is no longer pink, about 7 minutes.
  3. Add the smoked sausage.  Cook for 2 more minutes.
  4. In a small cup, add the corn starch and 1/2 cup of cold water. Stir till all the corn starch is liquidy.
  5. Pour corn starch mixture over chicken mixture and stir immediately for approximately 30 seconds.  Turn off heat and stir until mixture is thick.  Remove from heat.
  6. Taste the sauce. Add salt if needed.
  7. Serve over rice or noodles.

TIPS

  • If you want more kick to it, add some red cayenne pepper.
  • If it needs more salt AND kick, add more creole seasoning
  • You may add shrimp at the same time as the sausage if you like.  Do not add shrimp with the chicken or vegetables or the dish will taste like shrimp.
