If you want to cook breakfast at home but don't know what to make, if you have pototaes in your pantry, that's all you really need. I love home fries (breakfast potatoes)! I like to cook them with scrambled eggs and other leftover ingredients in my fridge (spinach, tomatoes, onions, bacon, ham, etc). You could have the best breakfast you ever made in just a little time. And I promise it will be better than eating at Waffle House or the IHOP.
This recipe makes enough for 2 if only eating potatoes, 4 if making other sides like eggs and meat.
2 large potatoes
1 small onion, cut into 1" pieces (optional)
1/2 bell pepper, cut into 1" pieces (optional)
3 T butter or 1/8 C vegetable oil or bacon grease
Puncture holes into the top of the potatoes using a fork. Place in the microwave, holes up, and cook on high for 8 minutes.
While the potatoes are cooking, use this time to cut up the onion and/or bell pepper. Heat a large, non-stick frying pan on med-high heat, go ahead and melt the butter or heat the oil.
When the potatoes are done, cut up into bite size pieces (be careful because they will be hot). Dump the potatoes, onions and peppers into the hot frying pan, cover. Turn the potatoes every 2-3 min for about 10 min total. Remove the lid and let cook for 2 more min or until the potatoes are as crispy as you like. The potatoes will soak up the butter/oil but do not add more.
Serve hot with mustard for dipping.

TIPS
- When the potatoes are done, add about a tablespoon of butter and add scrambled eggs.
- Cut up a couple of slices of bacon and add at the same time you put the potatoes in the pan.
- Instead of a bell pepper, add a diced, fresh jalapeno.
- Butter tastes much better than oil.
- To get more carmelized onions, cut them thinner and add them at the same time you start melting the butter in the pan.
