Easy Chicken Stroganoff

I made this recipe up the other day.   I was surprised by how easy it was to make and how tasty it ended up being.  This is a recipe for those who don't like to cook but like to eat.

Serves 6.

INGREDIENTS

  • 1 lb boneless chicken, cut into bite-size pieces or shredded
  • 1 can cream of chicken soup
  • 1 can cream of celery or mushroom soup
  • 1 cup / 8oz sour cream
  • 1 tsp salt 
  • 1/2 tsp black pepper
  • 8 or 12oz noodles of your choice

DIRECTIONS

In a baking dish, mix the first 6 ingredients together.  Cover and bake in the oven at 350ºF for about 45 min if using raw chicken, only 25 min if using cooked chicken.

In the meantime, cook the noodles per the instructions on the package.

When the chicken is done, pour over the noodles and mix; it will be very saucy.  Let it sit for 15 minutes.  The longer it sits, the thicker it will get.

Serve hot with a side of veggies.

TIPS:

  • Top with shredded cheese for the last 5 minutes of cooking.
  • Add caramelized onions for taste and texture.
  • Add cooked broccoli to make it a complete meal.
