Chipotle Crusted Pork Tenderloin

I found this recipe on Allrecipes.com (one of my favorite recipe sites when I want ideas).  This recipe is so simple, even my daughter who doesn't have a lot of cooking experience makes it!  It has a sweet and mildly spicy taste but also lean and healthy.

Pair this tenderloin with a sweet potato or cooked carrots and broccoli.




















Serves 6-8

INGREDIENTS

2 tsp onion powder
2 tsp garlic powder
4 T chipotle chile powder
1 T salt
1/4 C brown sugar
2 (1.5 lb) pork tenderloins

DIRECTIONS

  1. Preheat grill for medium-high heat.
  2. In a large resealable plastic bag, combine the onion powder, garlic powder, chipotle chile powder, salt, and brown sugar. Place tenderloins in bag and shake, coating meat evenly. Refrigerate for 10 to 15 minutes.
  3. Lightly oil grill grate, and arrange meat on grate. Cook for 20 minutes, turning meat every 5 minutes. Remove from grill, let stand for 5 to 10 minutes before slicing.

TIPS

  • Pork tenderloin is much smaller than regular pork loin.  It also usually comes 2 in a pack.
