Baked Spaghetti

BAKED SPAGHETTI

Takes about one and half hours to prepare and cook.  8 servings.  728 calories per serving

Every time I make this, EVERYONE goes back for seconds, sometimes thirds.  My daughter first made it for our family a few years ago and we have never forgotten it.  She shared the recipe with me and now I make it.  It is so delicious and quite easy to make.

If you want something filling, fairly inexpensive and delicious to feed a large group, this should definitely be at the top of the list.

INGREDIENTS

1 (16oz) package of spaghetti
1 lb ground beef
1 onion, chopped
1 jar (32oz) meatless spaghetti sauce
1/2 tsp seasoned salt (such as Lawry's)
2 eggs
1/3 C grated Parmesan cheese
5 T butter, melted
2 C small curd cottage cheese, divided in half
4 C shredded mozzarella cheese, divided into thirds

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 C).  Lightly grease a 9x13 inch baking pan.
  2. Cook spaghetti according to package directions.  Drain.
  3. In large skillet, cook and break apart ground beef with onion.  Cook until beef is no longer pink, drain fat.  Stir in the spaghetti sauce.
  4. Whisk eggs, parmesan cheese, and butter in a large bowl.  Mix in cooked spaghetti and toss to coat.  
  5. In greased baking pan, spread out half of the spaghetti mixture, top with half of the cottage cheese, next top with 1/3 of the mozzarella cheese then finish off with half of the meat sauce.  Repeat the layers.  Reserve 1/3 of the mozzarella for the next step.
  6. Cover with aluminum foil and bake in preheated oven for 50 minutes.  Remove the foil, top with the remaining mozzarella cheese and bake for another 10 to 15 minutes longer.
