Every time I make this, EVERYONE goes back for seconds, sometimes thirds. My daughter first made it for our family a few years ago and we have never forgotten it. She shared the recipe with me and now I make it. It is so delicious and quite easy to make.
If you want something filling, fairly inexpensive and delicious to feed a large group, this should definitely be at the top of the list.
INGREDIENTS
1 (16oz) package of spaghetti
1 lb ground beef
1 onion, chopped
1 jar (32oz) meatless spaghetti sauce
1/2 tsp seasoned salt (such as Lawry's)
2 eggs
1/3 C grated Parmesan cheese
5 T butter, melted
2 C small curd cottage cheese, divided in half
4 C shredded mozzarella cheese, divided into thirds
DIRECTIONS
- Preheat oven to 350 degrees F (175 C). Lightly grease a 9x13 inch baking pan.
- Cook spaghetti according to package directions. Drain.
- In large skillet, cook and break apart ground beef with onion. Cook until beef is no longer pink, drain fat. Stir in the spaghetti sauce.
- Whisk eggs, parmesan cheese, and butter in a large bowl. Mix in cooked spaghetti and toss to coat.
- In greased baking pan, spread out half of the spaghetti mixture, top with half of the cottage cheese, next top with 1/3 of the mozzarella cheese then finish off with half of the meat sauce. Repeat the layers. Reserve 1/3 of the mozzarella for the next step.
- Cover with aluminum foil and bake in preheated oven for 50 minutes. Remove the foil, top with the remaining mozzarella cheese and bake for another 10 to 15 minutes longer.
