Quick and Easy. Makes 6 servings.
Ingredients
4 boneless chicken breasts, fileted
2 tsp creole or cajun seasoning
1 T olive oil
1 can (10oz) cream of chicken soup
1/2 C water
1 can (4oz) chopped green chiles
1 tsp lime juice
1/4 C sour cream
1 1/2 C long grain white rice
Directions
Prepare rice as directed on package. Season chicken breasts with creole seasoning on both sides. Heat oil in large skillet on med-high heat. Add chicken and brown on both sides. Turn heat to low. Add soup, water, chiles and lime juice. Cook for about 5 minutes. Stir in sour cream and heat through. Serve over hot rice with a green vegetable on the side.
