Salisbury Steak


 INGREDIENTS

Salisbury Steak

2 lbs ground beef or turkey
1 sm onion minced fine, or 2 T onion flakes
2 eggs
1 T Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1 med onion, cut in half then sliced thin

Mushroom and Onion Gravy

2 C beef broth, or 2 C hot water & 2 T beef bouillon granules dissolved
1 T soy sauce
8oz mushrooms, sliced
1/4 C cornstarch slurry (1/4 C + 3 T cornstarch, stirred)

DIRECTIONS

In large mixing bowl, use hands to mix all the salisbury steak ingredients, except for the medium onion.  Heat large pan over medium heat.  Shape about 4 oz (1/2 C) salisbury steak patties into ovals about 3/4" thick.  In hot pan, place the sliced medium onion and the patties, cook covered for about 7 minutes then flip and cook for another 7 minutes.  Remove patties and place on plate, set aside.  Leave onions in the pan.

While pan is still hot, turn the heat up a notch.  Saute the mushrooms with the onions for about 5 minutes.  Pour in broth and bring to a slight boil.  Give the cornstarch slurry a quick stir then whisk it into the pan, constantly whisking to prevent lumps.  Turn off heat.  Gravy should begin to thicken immediately.  Return the patties back to the gravy and cover with gravy.  Serve hot with mashed potatoes, green beans and sweet cooked carrots.
