Tomato and Pepper Meatballs

I have this old print out from about 30 years ago of this recipe when my mom and I wanted to compile a cookbook.  It has to be one of my favorite dishes!  If you love peppers and onions, this dish will become a permanent dish on your menu.

Serves 6

INGREDIENTS

1 lb lean ground beef or turkey
3/4 C quick oats, uncooked
1 egg
3/4 tsp garlic powder
3/4 tsp black pepper
1/2 tsp salt
2 cans (14oz) stewed tomatoes, undrained
2 C coarsely chopped onions
2 C coarsely chopped bell peppers (color doesn't matter)
1/4 C cold water
2 T soy sauce
5 tsp cornstarch
5 tsp white or raw sugar

DIRECTIONS

In large bowl, combine the first 6 ingredients with your hands; mix well.  Shape into 3/4" meatballs.  In large pan on med-low heat, place meatballs and cover, let them cook for about 5 minutes without turning.  In small bowl, mix the water, soy sauce, cornstarch and sugar, set aside.  Add tomatoes with their juice and onions to the pan with the meatballs, cook for 10 minutes, stirring occasionally.  Add the bell peppers and cook for about 8 minutes.  Stir the sauce mixture then pour into the pan, the sauce should instantly thicken.  Stir constantly for 1 minute.  Turn off heat.  Serve over rice or noodles, if desired.
