Tostadas



INGREDIENTS

12 corn tortillas, uncooked
oil for deep frying
1 can refried beans
1 T taco seasoning
1 C cheddar cheese, shredded
1 C lettuce, finely sliced


DIRECTIONS

In large frying pan, heat about 2" of oil on med-high heat.  Fry the corn tortillas, one at a time till they are extra crispy.  Set on a paper towel lined plate.  In a small pot, heat up beans mixed with taco seasoning, stirring often.  Remove from heat.  Take a tostada (fried corn tortilla) and spread a generous spoon of beans on top, sprinkle with cheese and lettuce.  Devour.  Serves 3-4.
