EAT breakfast sandwich (my favorite breakfast sandwich)


I made this sandwich up one day since I had a ripe avocado and I must say it quickly became my favorite breakfast sandwich.  What sets it apart is the "everything bagel" seasoning, mmmhmm!  There is also something to be said about hot and cold together, it really makes a dish!  E = egg, A = avocado, and T = tomato, thus EAT.  Try a BEAT sandwich some time too (B = bacon).

Ingredients

1 egg
1/2 avocado, sliced
a few slices of tomato, sliced thin
2 slices bread, your choice
mayo or butter
Everything bagel seasoning

Directions

Heat an egg pan to medium heat with a teaspoon of butter.  Crack the egg in a bowl and carefully break the whites of the egg (this helps it cook evenly) then poke the yolk one time (if you don't want it runny, don't poke it if you want a runny egg).  Swish the butter around in the pan, then add the egg, sprinkle generously with Everything bagel seasoning.  

While the egg is sizzling, toast your bread in the toaster.  Flip the egg.  Once the toast is done, lather with mayo or butter to your liking.  Place the tomato and avocado on your toast then put the egg on it.  Close up the sandwich and enjoy the contrast of hot and cold and meld of flavors.  Yummy!!
